Here's a quick and convenient recipe for you to prepare a midweek meal that hits the spot.
8 Chicken thighs (these were quite small)
1 tsp Cajun seasoning
1tsp chicken seasoning
1tsp crushed garlic
1 small onion thinly sliced
1/2 a punnet mushrooms
Handful green beans
1tsp vegetable stock powder
1/2 cup cream
Salt and pepper
Preheat oven on 180.
Marinade the chicken with cajun and chicken seasoning.
Heat oil in a saucepan on medium heat, brown the chicken cooking it almost halfway and remove from pan.
Fry garlic, onion, mushrooms and green beans altogether until onions are soft, don’t forget salt and pepper and remove off heat.
Replace the chicken back in the pan.
In a separate bowl, combine stock powder, flour, milk and cream and pour over the chicken and bake for 30min. Switch off the oven and let it rest in the oven for another 10min.
